How long will it keep in the fridge? Where in Sydney can I get NZ salmon - only seem to get Tassie. I usually go to Faros in Marrickville for reference. Thanks Jill!
Four days. It might last longer but won't taste as fresh. Keep it covered, too.
Sustainably produced NZ salmon is king salmon, available from Harris Farm (although they seem to be changing their fish dept), and the Sydney Fish Market eg Claudio's. Look for brands Ora and Mount Cook Alpine salmon, and expect to pay. Otherwise, go for the most sustainably produced (sadly, usually the most expensive) from Tasmania.
Seems like it is hard to get everywhere. Recently got some in Merimbula. If I go back home to Warrnambool it is always available but here in Melbourne in the area I live, it is impossible. Good luck with your search
