Just love it. I have some friends who will only come here if I make my chicken and porcini risotto. I’ll hit them with this next time. Keeps them on their toes haha

Looks great! Maybe stir in a handful of pepitas at the end for some colour contrast and a bit of crunchiosity. Definitely a match for a nice glass of Fiano.

Jill, I sometimes feel like you're spying on me, your newsletters are so on-point.

I was looking at the quarter-pumpkin in my fridge last night and pondering what to do with it. And in my in-box, you've given me the answer!

Incidentally, not sure if you meant to spell it 'pumpkiniess'...but hey, it's your neologism. I'd always thought of it as 'pumpkinosity' or perhaps 'pumpkinitude'.

I just changed it to read 'pumpkininess' (thank you) but I'm not sure that's as good as pumpkinosity. And yes, I can see your fridge from here.
