This has been a regular lunch ever since I read this – throwing whatever I fancied onto the cooking egg – cheese, tomato, jalapenos…

Here's a variation I hit on this week: use a tortilla as the 'lid'. Let it cook for a minute, then flip it out onto a plate. Top with some prosciutto and rocket, roll up and enjoy!
