I’m not a huge gadget fan, but an air fryer is worth it. Does do good chips but for me it really comes into its own in summer. it’s a small oven that I can plug in outside so I don’t overheat the house in this weather.
My mouth is watering…. And I can’t remember the last time I had a spring roll, primarily due to the deep frying and not being sure how fresh the oil is. You have given me the inspiration to give them a try, even if just once. Thank you Jill.
This sounds like the perfect experimental conditions for the air fryer. Make a batch, borrow an air fryer or hit up a company for one and see how they turn out.
I know you are not a lover of gadgets, but most of us have thermometers now. Why not specify the oil temp rather than one of the old fashioned imprecise ways? Or (if you have to) do both?
I thought the same thought only yesterday - should I get an air fryer? So I googled that very question and also asked around. The overwhelming response was - NO! Lots of different reasons, and the two that stuck for me were - the space on the countertop, and the capacity of the thing. Oh yes, and also its limitations (many, as it turns out). Anyway, if you have a dark cupboard where you keep the George Foreman grill and other once-essential gadgets - go for it. Otherwise - whatever you have right now will be fine.
These spring rolls are SO delicious! I've made them twice already since this recipe was published, and both times they have been a huge hit. They are easy to make once you have the ingredients ready. I couldn't find the wood ear fungus, so used a mix of fresh shitaake and enoki mushrooms instead, and they turned out great. Worth nothing the recipe makes a lot more than 16 spring rolls... which is really not a problem at all! Loved the Nuoc Cham dipping sauce too. Thanks Jill, this one's a keeper!
My partner & I have been talking about making spring rolls since we got back from Vietnam in November, but haven’t gotten around to it. Taking this as our sign to make them this weekend!

And for those without a thermometer (or a bread cube handy 😉) the bubbling chopstick is a reliable indicator
